Granola (A Recipe)
This is a recipe for granola that I enjoy.
It's a mash-up of The Very Best Granola by Kathryne Taylor (Cookie and Kate) and Tahini and Cardamom-Spiced Granola by Karen Biton-Cohen (Kitchn). Check out those posts for thorough explanations and beautiful pictures.
Making this granola is also a great way to use a 46oz jar that used to be full of pickles, and that tahini you opened in 2005.
Instructions
Preheat oven to 350F. Adjust all proportions to taste.
Mix in bowl:
- 2 C oats
- 2 tsp cardamom
- 1/2 tsp cinnamon
- pinch of salt
- 3/4 C pecans (chopped)
- 1/2 C pepitas (aka shelled pumpkin seeds. Little pepas?)
- 1/3 C sunflower seeds

Mix in pyrex 2c measurer:
- 1/4 C tahini
- 1/3 C olive oil
- 1/2 C maple syrup
- 1 tsp vanilla

All the wet ingredients mixed and looking appetizing
Pour the liquids over the oat/nut/seed mixture and stir well.
Spread out on parchment-paper covered tray.
Bake 25-35 mins, stirring every 10 minutes.
Let cool before breaking up and putting in jar.
